Ingredients
  

  • 500 g 00 Wheat Flour
  • 30 g Buckwheat Flour
  • 7 g Dried Yeast
  • 12 g Salt
  • 350 g Water
  • Rosemary
  • Olive oil
  • Sel de Guérande

Instructions
 

  • Mix the yeast in the water
  • Mix the two flours together
  • Add the yeasted water with the flour mix
  • Leave to rest for 30 minutes
  • Add the salt and mix again
  • Leave to prove for 90 minutes with one stretch and fold half way through
  • Pour olive oil in your baking tin and tip the dough in the tin
  • Sprinkle the fresh rosemary, add a good splash of olive oil and press with your fingers to dimple the dough
  • Pre heat the oven at 230 degrees
  • Leave the dough to prove for 20 minutes
  • Sprinkle the sel de Guérande and bake for 20 minutes
