Sel de Guérande
Instructions
Mix the yeast in the water
Mix the two flours together
Add the yeasted water with the flour mix
Leave to rest for 30 minutes
Add the salt and mix again
Leave to prove for 90 minutes with one stretch and fold half way through
Pour olive oil in your baking tin and tip the dough in the tin
Sprinkle the fresh rosemary, add a good splash of olive oil and press with your fingers to dimple the dough
Pre heat the oven at 230 degrees
Leave the dough to prove for 20 minutes
Sprinkle the sel de Guérande and bake for 20 minutes
