Ingredients

soy milk kept cold in the fridge
(¼ cup)

maple syrup or agave nectar

Dijon Mustard

lemon juice

oil (sunflower, canola or rapeseed)
(1/2 cup)
Pinch of salt
Instructions
Put all the ingredients at the exception of the oil and the lemon juice in your blender and blitz for 5-10 second.
Incorporate slowly the oil to create an emulsion.
When the mayonnaise starts to thicken, add the lemon juice.
You can add a little garlic with instruction one if you would like to make an aioli mayonnaise.
