Equipment

  • High speed blender(nutribullet ok)

Ingredients
  

  • 60 ml soy milk kept cold in the fridge (¼ cup)
  • 1 tsp maple syrup or agave nectar
  • ½ tsp Dijon Mustard
  • 1 tsp lemon juice (5 ml)
  • 125 ml oil (sunflower, canola or rapeseed) (1/2 cup)
  • Pinch of salt

Instructions
 

  • Put all the ingredients at the exception of the oil and the lemon juice in your blender and blitz for 5-10 second.
  • Incorporate slowly the oil to create an emulsion.
  • When the mayonnaise starts to thicken, add the lemon juice.
  • You can add a little garlic with instruction one if you would like to make an aioli mayonnaise.
