Roasted Vegetables with Ras el Hanout
Ingredients
- 2 Onions
- 3 Carrots
- 1 Aubergine
- 1 Red pepper
- 1 Turnip
- 1 Courgette
- 1 Tin of chickpeas
- 1 Heaped Tsp Ras el Hanout
- 30 ml Olive oil
- Salt & pepper
- Parsley
Ras el Hanout
- Coriander
- Turmeric
- Cumin
- Fennel
- Pepper
- Fenugreek
- Chilli
- Mustard
- Cardamon
Instructions
- Peel and chop the vegetables
- Mix the vegetables with the spice, salt & pepper and olive oil
- Pre heat the over to 220 degrees
- Cook the vegetables in a wide dish or 30 minutes, stirring one or twice
- Add the chickpeas 5-10 minutes before the end of cooking
- Stir-in the chopped parsley just before serving
