Ingredients
  

  • 2 Onions
  • 3 Carrots
  • 1 Aubergine
  • 1 Red pepper
  • 1 Turnip
  • 1 Courgette
  • 1 Tin of chickpeas
  • 1 Heaped Tsp Ras el Hanout
  • 30 ml Olive oil
  • Salt & pepper
  • Parsley

Ras el Hanout

  • Coriander
  • Turmeric
  • Cumin
  • Fennel
  • Pepper
  • Fenugreek
  • Chilli
  • Mustard
  • Cardamon

Instructions
 

  • Peel and chop the vegetables
  • Mix the vegetables with the spice, salt & pepper and olive oil
  • Pre heat the over to 220 degrees
  • Cook the vegetables in a wide dish or 30 minutes, stirring one or twice
  • Add the chickpeas 5-10 minutes before the end of cooking
  • Stir-in the chopped parsley just before serving
